The Basics: Tips for Rice

          Below are some tips for making a few different styles of white rice, like fluffy, sticky, and rice that's good for sushi. These instructions are given with the idea that you already know how to cook rice, either in a rice cooker or on the stove top.

Fluffy Rice

 1. Pour your desired amount of uncooked rice into your pot or rice cooker bowl & cover the rice with cold water. Next, reach your clean hands in & scrub handfuls of the rice between your hands. The water will be very cloudy. Drain the water & then repeat the process of submerging, scrubbing, & draining about 3-4 times or until the water becomes clear.
2. At this point fill the pot or rice cooker bowl up to the appropriate level for the amount of rice you're cooking. Let the rice soak for a little while, ideally 20 minutes or longer, & then cook according to your preferred method. Once the rice is done cooking simply fluff with a fork & enjoy!

Sticky Rice

 
1. Make sure the rice you are using is long-grain sticky rice, sweet rice, or glutinous rice. Add salt to the rice, 1/2 tsp. per 2 cups, & let the rice soak in its water for at least 30 mins (preferably longer) before cooking.

Sushi Rice

1. Heat & whisk 1/4 cup vinegar (rice vinegar if you have it), 1 Tbsp. white granulated sugar, & 1/2 tsp. salt until the sugar & salt are dissolved (combining these 3 ingredients in a glass measuring cup & heating it in the microwave for about 2 mins works great).
2. Pour the vinegar mixture over warm-hot rice* & fluff/mix it together thoroughly with a fork.
*This sushi vinegar amount is for about 2-3 cups of cooked rice.
